Prep: 1 hour 15 min · Cook: 15 min · Serves 10 · Cuisine: Moroccan
Ingredients
- 5 cups whole wheat flour
- 1 tablespoon instant yeast
- 1 tablespoon honey
- 1 pinch salt
- 3 cups lukewarm water
- 2 tablespoons olive oil
- 1/2 cup fine wheat bran
Method
- In a large bowl, combine the whole wheat flour, instant yeast, honey, salt, and lukewarm water.
- Mix with a wooden spoon until a wet, sticky dough forms. Cover and let it rest for 10 minutes to allow the flour to absorb the water.
- Drizzle the olive oil over the dough and mix it in using your hands or a spoon. Cover the bowl and let the dough rise in a warm place until doubled in size.
- Gently deflate the risen dough. Using a spoon or oiled hands, portion the dough into small balls.
- Roll each dough ball in the fine wheat bran until completely coated.
- Place the balls onto a baking sheet lined with parchment paper. Gently flatten each ball with your hand to form a round disk.
- Use the handle of a wooden spoon or honey dipper to press a hole in the center of each disk.
- Let the rolls rise for a second time for about 15 to 20 minutes.
- Preheat the oven to 425 degrees F (220 degrees C). Bake the rolls with both top and bottom heat until they are fully baked and golden brown.
