Ingredients

Method

  1. Preheat your oven to 170°C (340°F). Line the bottom of a small pound cake tin with baking paper.
  2. In a large mixing bowl, cream the softened butter and brown sugar together until pale and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. Crack in the eggs one at a time, mixing thoroughly after each addition until fully incorporated.
  5. In a separate bowl, sift the cake flour and baking powder together. Add the almond flour to the dry ingredients.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding gently with a spatula until just combined. Be careful not to overmix.
  7. Add the lemon zest and 1 tablespoon of lemon juice to the batter, mixing until evenly distributed.
  8. Pour the batter into the prepared pound cake tin and smooth the top with a spatula.
  9. Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Remove the cake from the oven and let it cool in the tin for 10 minutes.
  11. While the cake is cooling, prepare the icing: In a small bowl, combine the powdered sugar and 1.5 tablespoons of lemon juice. Whisk until smooth. If the powdered sugar is clumpy, sift it before mixing.
  12. After 10 minutes, carefully remove the cake from the tin and place it on a wire rack with the flatter bottom facing up.
  13. While the cake is still warm, brush the lemon icing evenly over the entire surface.
  14. Allow the cake to cool completely before serving. The flavors are best when the cake is allowed to sit overnight.
