Prep: 10 min · Cook: 10 min · Serves 2 · Cuisine: Fusion
Ingredients
- 2 sheets rice paper
- 1 unit raw egg
- 2 eggs scrambled eggs
- 2 slices turkey breast or ham
- 2 slices Manchego cheese or similar melting cheese
- to taste salt
- to taste black pepper
- for topping everything bagel seasoning or sesame seeds
Method
- Prepare the scrambled eggs ahead of time by cooking 2 eggs in a pan with a pinch of salt and pepper, then set aside to cool slightly.
- Crack the remaining raw egg onto a wide, shallow plate and whisk it well.
- Dip one sheet of rice paper into the beaten egg, coating both sides thoroughly so it softens. Let any excess egg drip off.
- Lay the egg-coated rice paper flat on a clean cutting board.
- Place half of the cooked scrambled eggs, one slice of turkey breast, and one slice of Manchego cheese in a line along the lower third of the rice paper.
- Roll the rice paper up tightly over the filling to create a long cylinder.
- Connect the two ends of the roll together, pressing them firmly to seal and form a bagel shape. Repeat this process for the second bagel.
- Sprinkle everything bagel seasoning or sesame seeds generously over the tops of the bagels.
- Place the bagels in the air fryer basket. Cook at 375 degrees F (190 degrees C) for 8 to 9 minutes, until they are puffed, golden brown, and crispy.
- Serve hot and enjoy.
