Prep: 4 hours · Cook: 3 hours · Serves 6 · Cuisine: American
Ingredients
- 12 cups whole figs
- 6 cups sugar
- 1/4 cup lemon juice
Method
- Thoroughly wash the whole figs and gently pat them dry.
- In a large bowl, combine the whole figs and sugar. Cover the bowl and let it sit at room temperature for 3 to 4 hours until the figs start to release their natural juices.
- Transfer the sugared figs and all accumulated juices into a large cooking pot.
- Turn the heat to low and add the lemon juice. Stir gently to combine.
- Cook on low heat, stirring occasionally, until the juice becomes a syrup-like consistency or reaches 220 degrees F on a candy thermometer. This process will take a few hours.
- Ladle the hot preserves into sterilized canning jars, leaving 1/4-inch of headspace.
- Wipe the rims of the jars with a clean, damp paper towel to ensure a good seal. Place the lids and bands on the jars, tightening until fingertip tight.
- Process the jars in a boiling water bath canner for 15 minutes.
- Carefully remove the jars from the water bath and place them on a towel-lined countertop to cool completely for 24 hours before checking the seals.
