Homemade Strawberry Twizzlers
By nabylb
A delicious, chewy homemade version of the classic strawberry licorice candy made with real fruit.

Prep: 30 min · Cook: 5 hours 10 min · Serves 4 · Cuisine: American
Ingredients
- 1 cup fresh strawberries
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 cup granulated sugar
- 1/2 cup freeze-dried strawberries
- 1 cup all-purpose flour
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/3 cup light corn syrup
- 3-4 drops red gel food coloring
Method
- Combine the fresh strawberries, water, and lemon juice in a blender and blend until smooth. Strain the mixture through a fine-mesh sieve to collect 1/2 cup of smooth strawberry puree.
- Pour the strawberry puree into a small saucepan, add the granulated sugar, and cook over medium heat, stirring occasionally, until the sugar is completely dissolved and the mixture begins to simmer.
- Blend the freeze-dried strawberries in a high-speed blender or spice grinder until they form a fine powder. Sift the powder to remove any large seeds.
- In a medium bowl, whisk together the flour, sifted freeze-dried strawberry powder, cornstarch, and salt.
- Pour the light corn syrup and the hot strawberry-sugar syrup into the bowl with the dry ingredients. Whisk until a smooth, pink batter forms.
- Pour the batter back into the saucepan. Cook over medium-low heat, stirring constantly with a spatula. Add a few drops of red gel food coloring to deepen the color. Continue cooking and stirring vigorously for 5 to 7 minutes, until the mixture thickens significantly into a very stiff, dough-like paste.
- Transfer the hot dough into a piping bag fitted with a star piping tip.
- Pipe the mixture into long, straight strips onto plastic mesh dehydrator sheets or parchment paper.
- Gently roll and twist each strip to create the classic Twizzler spiral pattern.
- Place the twisted candies in a dehydrator and dehydrate at 135 degrees F (approx. 57 degrees C) for 4 to 6 hours, or until they are chewy and no longer sticky to the touch. Allow to cool completely before serving.
