Ingredients
- 1 large ripe mango
- 1 lime
- as needed white sugar
- to taste sansho pepper or chili flakes
- to taste flaky salt
Method
- Cut the two cheeks from the mango and score the flesh into a grid without cutting through the skin.
- Gently open the cuts and add a little lime juice and finely grated lime zest between the pieces. Return the mango cheek to a flat shape.
- Pat the surface very dry with a paper towel.
- Dip the flesh side into the sugar, coating it with a thin, even layer.
- Caramelize with a blowtorch until the sugar becomes deep golden and crisp.
- Leave for 1–2 minutes, until the caramel is completely hard.
- Finish with a tiny pinch of sansho, lime zest, and a few flakes of salt.
