Cheese-Stuffed Potato Flatbreads
By nabylb
Pan-fried potato flatbreads with a crispy exterior and a gooey melted cheese center.

Prep: 20 min · Cook: 25 min · Serves 4 · Cuisine: French
Ingredients
- 3 large potatoes, peeled and diced
- 160 g all-purpose flour
- to taste salt
- generous amount grated cheese or cheese chunks, such as mozzarella or cheddar
- 1-2 tbsp olive oil, for frying
- to taste fleur de sel, optional, for garnish
- to taste fresh cilantro or parsley, chopped, optional, for garnish
Method
- Boil the diced potatoes in a pot of salted water until fork-tender. Drain and let cool completely.
- Transfer the cooled potatoes to a large bowl and mash thoroughly.
- Add the salt and flour to the mashed potatoes. Mix and knead with your hands until a soft, cohesive dough forms.
- Divide the dough into 4 equal portions.
- Flatten each portion into a disk, place a generous amount of cheese in the center, and fold the dough over to seal the cheese completely inside. Gently shape and flatten into a round patty.
- Heat the olive oil in a non-stick skillet over medium heat.
- Place the patties in the pan and cook for a few minutes until the bottom is nicely golden brown.
- Flip the flatbreads, cover the pan with a lid, and cook for another few minutes until the other side is golden and the cheese is fully melted.
- Sprinkle with fleur de sel and chopped cilantro or parsley if desired, and serve warm.
