Ingredients
- 1 cup sweetened condensed milk
- 1 tablespoon butter
- 2/3 cup shredded coconut
- 1 1/2 cups granulated sugar
- 1 tablespoon lemon juice
- 1 cup water
Method
- In a pan, combine the sweetened condensed milk, butter, and shredded coconut.
- Cook over medium-low heat, stirring constantly, for about 10 minutes until the mixture thickens and begins pulling away from the bottom of the pan.
- Transfer the coconut mixture to a bowl, cover, and refrigerate until completely cooled and firm.
- Once cooled, roll the coconut mixture into small, bite-sized balls.
- In a saucepan over medium-high heat, combine the sugar, lemon juice, and water to make the caramel coating.
- Cook the syrup without stirring until it boils and turns a deep amber color.
- Using a toothpick or skewer, carefully dip each coconut ball into the hot caramel to coat it completely.
- Place the coated balls onto parchment paper and let them sit until the caramel shell cools and hardens.
