Ingredients
- 3.5 cups all-purpose flour (500 g)
- 1/2 cup confectioners sugar (75 g)
- 3/4 tbsp baking powder (10 g)
- Pinch salt salt
- 1/3 cup oil
- 1.5 cups butter (non-dairy or dairy, room temperature) (340 g)
- Scant 1/4 cup water (scant, 50-55 ml)
- 1/2 to 3/4 cup plant-based Nutella (per dough portion)
- 1/4 to 1/2 cup crushed hazelnuts (per dough portion)
- 1/2 to 3/4 cup date spread (per dough portion)
- 1/4 to 1/2 cup crumbled halva (per dough portion)
- 1/2 to 3/4 cup Biscoff cookie butter (per dough portion)
- 1/4 to 1/2 cup crushed cookies (per dough portion)
- as needed for dusting powdered sugar
Method
- 1. In a large bowl, combine the all-purpose flour, confectioners sugar, baking powder, and a pinch of salt.
- 2. Add the oil and non-dairy/dairy butter to the dry ingredients. Mix by hand, wearing gloves, until the mixture is crumbly and well combined.
- 3. Gradually add the scant 1/4 cup of water and continue mixing by hand until a soft, pliable dough forms. It should take less than 5 minutes to make the dough.
- 4. Divide the dough into three equal parts.
- 5. Take one part of the dough and place it between two sheets of parchment paper. Using a rolling pin, roll the dough out evenly to a rectangular shape, about 1/4 inch thick. Remove the top sheet of parchment paper.
- 6. For the first filling, spread a layer of plant-based Nutella evenly over the rolled dough. Sprinkle generously with crushed hazelnuts.
- 7. Using the bottom parchment paper to assist, carefully roll the dough tightly into a log.
- 8. Using a knife or a bench scraper, cut the log into approximately 20 equal-sized cookies, about 1.5 to 2 inches long.
- 9. Place the cut cookies onto a baking sheet lined with parchment paper.
- 10. Repeat steps 5-9 for the remaining two dough portions and fillings: For the second filling: spread date spread and sprinkle with crumbled halva. For the third filling: spread Biscoff cookie butter and sprinkle with crushed cookies.
- 11. Preheat your oven to 350°F (175°C).
- 12. Bake the cookies for about 25 to 30 minutes, or until they are lightly golden around the edges.
- 13. Once baked, remove the cookies from the oven and let them cool slightly on the baking sheet.
- 14. Dust the cooled cookies generously with powdered sugar using a sieve.
- 15. Arrange the cookies on a platter or pack them in a gift bag or basket to share.
