Fun, crispy smiley face fries made from mashed potatoes, soaked bread, flour, and seasonings.

Prep: 20 min · Cook: 25 min · Serves 4 · Cuisine: American / Fusion
Ingredients
- 3-4 slices white sandwich bread
- 3 medium russet potatoes
- 1/2 cup all-purpose flour
- as needed all-purpose flour, for dusting
- 2 tbsp grated Parmesan cheese
- 1/2 tsp black pepper
- 1/2 tsp paprika
- as needed for deep frying neutral oil
- as needed for serving ketchup
- as needed for garnish fresh parsley
Method
- Place the bread slices in a tray of water and soak thoroughly. Squeeze out all excess liquid, then finely chop the bread.
- Boil the whole unpeeled potatoes in a large pot of water until fork-tender.
- Drain the potatoes, let them cool slightly, and peel them.
- Transfer the peeled potatoes to a large bowl and mash thoroughly.
- Add the chopped soaked bread, flour, Parmesan, black pepper, and paprika to the mashed potatoes.
- Mix and knead by hand until a smooth, uniform dough forms.
- Dust a clean work surface with flour and roll the dough to about 1/2-inch thickness.
- Use a small round cutter or ring mold to cut out circles of dough.
- Use a drinking straw to make two eyes in each circle, then press in a smiling mouth with the edge of a small spoon.
- Heat the deep-frying oil to 350°F (175°C). Fry the smiley fries in batches until golden brown and crispy, about 3–4 minutes.
- Remove the fries with a slotted strainer and drain on a wire rack.
- Transfer to a serving dish and serve hot with ketchup and fresh parsley.
