Prep: 4 hours · Cook: 0 min · Serves 3 · Cuisine: Italian
Ingredients
- 300 g bread flour
- 7 g salt
- 0.6 g yeast
- 195 g water
Method
- Combine the bread flour, yeast, and salt in a large bowl.
- Pour the water into the bowl (use ice water if the room temperature is high).
- Mix the ingredients by hand, incorporating the dry flour into the wet dough until a single mass forms.
- Transfer the dough to a clean work surface and knead it for 10 minutes.
- Slap and fold the dough against the surface to strengthen the gluten until it is smooth and shiny.
- Cover the dough with a bowl and let it rest for 10 minutes to prevent drying.
- Divide the dough into three equal portions, about 160 grams each.
- Shape each portion into a tight, smooth ball by cupping your hand and tucking the outer dough underneath, then sealing the bottom.
- Place each dough ball into an individual bowl, cover with plastic wrap, and let ferment for 3 to 4 hours at room temperature until they double in size.
