Bell Pepper Taktouka
By nabylb
A traditional Moroccan salad made of roasted bell peppers, tomatoes, garlic, and warm spices, typically served warm or cold with crusty bread.
Prep: 20 min · Cook: 25 min · Serves 4
Ingredients
- 1 red bell pepper
- 1 green bell pepper
- 4 tomatoes
- 4 tbsp olive oil
- 4 garlic cloves, crushed
- 1/2 tsp sweet paprika
- 1/2 tsp cumin
- to taste salt and pepper
- 1 tbsp chopped parsley and coriander (cilantro)
Method
- Grill the bell peppers over an open flame or under the broiler, then place them in a food-safe plastic bag for a few minutes so they steam, cool down, and become easy to peel (it is recommended not to wash them after peeling). Cut them into small dice.
- Stem, peel, and seed the tomatoes, then cut them into small dice. Sear them in a pan with the olive oil, crushed garlic, sweet paprika, and cumin. Season with salt and pepper. Let the sauce reduce over low heat, stirring carefully.
- Add the diced peppers to the tomato sauce and stir everything together with a wooden spatula. At the end of cooking, sprinkle the taktouka with the chopped parsley and coriander as a garnish.
- Serve hot or cold according to your taste.
