Sweet Pickle Relish (Minced Pickles)
By May
A sweet and sour minced pickle perfect for hot dogs, easy to make and store in the refrigerator.

Prep: 30 min · Cook: 10 min · Serves 4
Ingredients
- 500 g Cucumber (minced)
- 1 piece Onion (minced)
- 1/2 piece Red bell pepper (minced, optional)
- 1 tbsp Salt (for preparation)
- 200 ml Rice vinegar or grain vinegar
- 150 g Sugar
- 1 tsp Mustard seeds
- 1/2 tsp Dill seeds
- 1/4 tsp Turmeric (for coloring, optional)
- 50 ml Water
Method
- Mince the cucumber, onion, and red bell pepper (if using) into 3-5mm pieces using a food processor or knife.
- Place the minced vegetables in a bowl and sprinkle with salt. Mix well and let sit in a colander for about 30 minutes to drain excess moisture.
- Wrap the drained vegetables in a clean cloth or paper towel and squeeze out as much moisture as possible to avoid a soggy texture.
- In a pot, combine rice vinegar, sugar, mustard seeds, dill seeds, turmeric (if using), and water. Heat over medium heat, stirring until the sugar dissolves (about 5 minutes).
- Add the squeezed vegetables to the pot and bring to a boil. Reduce heat and simmer for about 5 minutes.
- Pack the hot mixture into sterilized jars, let cool, then seal and refrigerate.
- Let sit for half a day to a day for the flavors to meld. Can be stored in the refrigerator for 2-3 weeks.
